Pork Schnitzel with Dill Cream Sauce

Image
I am not the biggest fan of pork chops. I like pork tenderloin, bacon, ham, etc, but chops not so much. I do dig a good pan sauce however so I still was kind of excited. I do like good schnitzel, yes pork schnitzel, but this recipe did not produce that wonderful schnitzel I like. The sauce was pretty yummy and the boys didn't complain about the s so it must be my issues (again:).  My husband picked it off Pinterest and since it was from allrecipes.com I have no problem posting it here. (I am always a little concerned about allrecipes. I have had a few really good recipes, several fixable and a few bad recipes from them.)  I totally forgot about sides when I was at the store, so I cooked a half a box of whole wheat pasta I had cluttering up the pantry and tossed it with a bit of butter.   (and then dill sauce ;) And I steamed some broccoli too.  The boys rated it a 4 & a 4.5, I am torn because the sauce was a 4.5 for sure, the pork more like a 3 for...

Dill Pickle Soup

Image
Well I am not a fan of Guy Fieri, but I do sometimes watch Diners, Drive Ins and Dives.  I enjoy seeing the, sometimes bizarre, dishes from little places around the country.  This dish was one of those oddities that I had to try.  I happen to love pickles!  I was the only one in the family that was expecting to like this.  My husband's first comment was. "make that on a night I'm not home for dinner."  Well he was home tonight, and he decided to alter his comment to, "I'm not excited but I am intrigued."    To make a long story short,  it was alright.  The more we ate it, the better it became, but in the end I think the best recommendation I can give is that my husband liked it a lot better than he expected.  I don't plan on keeping the recipe, but I will look around for another pickle soup recipe as It think it has possibilities.  I wish I had read the reviews for the soup before I made it.  I was thinking that a res...

Arroz Con Crema

Image
I first saw this on "The Best Thing I Ever Ate".  Aaron Sanchez picked his mother's Arroz Con Crema.  I thought it looked amazing.  Now, I got this off the website for his mother's restaurant, but I am sure mine didn't hold a candle to hers.  This was very tasty.  My son declared this worthy of his favorite file!  My husband isn't home yet, so I can't give you his feed back, but it is a win with us.  I am excited to have it as leftovers.  I know it sounds strange, waiting for leftovers, but tomorrow morning, this with a runny egg yolk just might be heaven.  I only planned on serving this with a salad since it is meatless Monday, but with an egg it would have protein and still be meat free.  Next time:) Arroz Con Crema 4 c  water 2 c  Uncle Ben’s or other converted rice 1 T  butter 2 t  salt For the sour cream mixture 2 c  sour cream 1/2 c  chopped onion 1/4 c  chopped cilantro 1  ...
