Pimento Cheeseburgers with Bacon Jam

Image
My son loves burgers. I craved them when pregnant with him so, he’s obviously loved them from the start 😂. While we all love a great regular, normal burger, trying out new kinds of burgers happens often around here. I love pimento cheese, not sure why, but I do. I am alone in this in the house 🤷‍♀️. I make my own, and happened to have some on hand when looking through my to try recipes, and this one leapt out. I was excited, so was the boy because it’s a burger, but my husband and daughter were looking glum. But not for long :)  Since this recipe for pimento cheese has gochujang and Worcestershire, and mine didn’t, I added it to the meat. I loved this burger. So did everyone else.  BACON JAM: 1/4 pound slab bacon, finely diced (1/3 cup) 1/2 small onion, finely chopped 2 tablespoons brewed coffee 1 1/2 tablespoons soy sauce 1 tablespoon apple cider vinegarO 1 tablespoon brown sugar 1 tablespoon granulated sugar Kosher salt Pepper About a cup of pimento cheese  ...

Korean-inspired Burgers with Kimchi and Sriracha Mayo

Image
I neglected to save the address for this burger, so my apologies to the blogger for not being able to send readers to their site for the recipe.  The burgers were good, but I thought missing something.  I decided it was the Swiss cheese I bought for this, but isn't in the recipe, and so was left off when I did the actual cooking.   Despite the feeling it was missing something, it was still pretty good.  Best thing about this recipe is that my son, a very vocal kimchi hater, loved it and had no idea there was kimchi in it and I got to say I told you so:). Korean-inspired Burgers with Kimchi and Sriracha Mayo KIMCHI REUBEN BURGERS 1 1/2  pounds ground beef 4 cloves garlic, minced about 2 inches fresh ginger,  grated with a microplane 1 teaspoon sriracha 1/2 teaspoon fish sauce 1/2 teaspoon salt fresh black pepper to taste 1 cup kimchi, divided SRIRACHA MAYO 1/3 cup mayonnaise, preferably homemade 1-3 teaspoons ...

Spicy Whiskey BBQ Sliders

Image
I have my own odd food prejudices that I believe always apply even thought my husband delights in pointing out every time I enjoy one of those taboo foods.  One of those issues is with BBQ sauce.  Now I know there are a multitude of varieties of BBQ but I just kind of have an innate dislike of them.  If I am to eat BBQ, the sauce must be tomato based and a little sweet and a little spicy.  I really did like these sliders.  I took a BBQ sauce I "enjoy" and the addition of the whiskey was really great.  These weren't hard and they are great as dinner or party snacks.  Spicy Whiskey BBQ Sliders 2 pounds Ground Meat (beef, Bison, Turkey) Salt And Pepper 4 Tablespoons Butter 1 whole Large Onion, Diced 1/2 cup Whiskey 1 cup Barbecue Sauce 1/4 cup Jarred Jalapeno Slices (more To Taste) 12 whole Slider Buns Or Dinner Rolls, Split Form the meat into 12 (or so) miniature patties and salt and pepper them on both sides. Melt the but...

Thai Curry Turkey Burgers

Image
It's like the chicken and the egg question. Am I slacking on the blog because I have been repeating, or am i repeating because I have been slacking either reason, the family is happy.  These haven't. Even made in a while and I was interested to see if they where as good after a year and a half of new food. It so good!  It might even have been better. The combo of the red thai curry and turkey is wonderful! Thai Curry Turkey Burgers 1-1/4 lb. ground turkey (not ground turkey breast) 2 Tbs. red or green Thai curry paste Kosher salt and freshly ground black pepper Vegetable oil, for the grill 1 medium lime 2/3 cup mayonnaise 3/4 cup thinly sliced seedless cucumber 1/4 cup fresh cilantro leaves 1 small shallot, thinly sliced 1 Tbs. seasoned rice vinegar 4 sesame seed hamburger buns Sliced tomato, for serving Prepare a medium gas or charcoal grill fire. In a medium bowl, gently mix the turkey, curry paste, and 1/4 t...

Bulgogi Burger

Image
Talk about a first world problem!  We are just jaded enough to crave new favors but have had enough tasty food (burgers particularly)  that it takes a bit to wow us as well. This burger is good. It's probably great but we just have a hard time feeling like giving an accurate opinion to anyone outside the family. Ok ramble over. It's good. Enough said. The sesame seeds in the burger were interesting. It's also a great way to be introduced to Kim chi.  Worth a try for sure.  I Bulgogi Burger   1 1/2 pounds ground beef 1/4 cup sesame seeds 3 tablespoons soy sauce 2 tablespoons gochujang 2 tablespoons sesame oil 5 scallions, chopped 5 cloves garlic, grated 2 tablespoons ginger, grated 2 tablespoons rice wine vinegar 1 tablespoon brown sugar 6 burger buns 14 ounces kimchi. roughly chopped Mix all of the marinade ingredients together (everything except the beef, buns, and kimchi) and...

Dallas Burger

Image
I do like Bobby Flay recipes and this looked really good despite my less than enthusiastic feelings towards BBQ. We all enjoyed it too, but we realized we have had so many wonderful burgers, it's hard to be wowed any more. Still really tasty and the best part is the BBQ sauce. I love it!  Go figure:).  The recipe for this was mostly the sauce and then how to make your burger and toppings as "suggestions".  I followed all the steps.  The most difficult part of the whole process was the grinding of the chiles to make the powder, but it wasn't that bad.  The sauce was totally worth it.  I'm salivating just thinking about it.  (and have I mentioned I don't care for BBQ:)  Dallas Burger Bobby's BBQ Sauce : 2 Tbl canola oil 1 Spanish onion chopped 3 Clove garlic chopped 1 Cup ketchup 2 Tbl ancho chile powder 1 Tbl paprika 1 heaping tablespoon dijon mustard 1 Tbl red wine vinegar 1 Tbl Worcestershire sauce 1 chipotle chile in adobo chopped ...

The Hoisin Heisenberger With Marie's Purple Slaw

Image
I am afraid of what you will think of me when I say what I am about to say.  Please don't judge me too harshly, but I have never seen Breaking Bad.  Still with me?  Ok, my husband is watching it on Netflix, and I think I would like the show, but I really hate mob movies and all the killing and violence in them and I have lumped (I am told unfairly) Breaking Bad in to this genre.  As such, I have as much desire to watch it as I do to eat sweet and savory together.  (regular readers inside joke;)  But any reason for a party and themed food works for me, so when I saw that The Savory was suggesting this Breaking Bad Burger, I was so in.  (like I need a reason for burgers in this house)  it wasn't too hard to prep, but when I was cooking the burgers they broke and it was bad! (I know groan!). But it's true. The burgers didn't stay together well. I managed to keep one intact for the picture, but a few of them had a ring crumble off and I had ...

Salmon Burger with Sesame Mayo

Image
I swear there is a burger conspiracy out there. Or maybe it is perpetuated by the ground beef people.  Eight buns in a pack and most families hover around the 4 mark.  Now we have to have burgers again right?!  I adore burgers but twice a week is bit much every time we have burgers.  (the boy's favorite food and what I craved when I was pregnant with him)  So I let my boy check out the to try file for burgers and he chose this Salmon (no surprise there) burger from Happy Valley Chow .  It was very good!!  (and it showed those ground beef conspiracy nuts what's what ;) My husband cooked again since I am still feeling a bit yucky, and he was really impressed how well they held together!  They the mayo was perfect and I totally loved it.  We all totally loved the burger.  (Even the girl)  I am keeping a short post; I'm turning in early.  I need to be rested and have my strength for tomorrow's Gator game.  We are ha...

Caprese Burgers

Image
The boy and I really liked them.  My husband said they were good but not that great, but I think the fiasco he had cooking them on the grill colored his judgement.  You see, pesto is a good percentage of oil and when you put oil soaked burgers on a gas grill, the oil cooks out, and causes a big mess and a big fire!  So, he was a little annoyed with the burgers before he even tasted them.  He said I should warn any of you who might attempt the burgers (and I do recommend that you do:) most emphatically not to cook them on a grill but on the stove in a pan.  No, it wasn't a top 10 burger, but still good.  The boy ate 1 1/2 before we had finished our first, and that is saying something! Caprese Burgers   2 Cup basil leaves 1/4 Cup salted roasted almonds 1 garlic clove 1/2 Cup extra-virgin olive oil plus more for brushing 1/4 Cup grated Pecorino-Romano cheese Salt Freshly ground pepper 1 Lb ground beef chuck 1 Lb ground beef sirloin 8...

Sausage Burgers with Sriracha Honey Mustard Sauce

Image
I had 4 hamburger buns from Sunday, so it would be wasteful of me to not make burgers again right??  So I had my boy browse my Pinterest burger board, and he picked this one. GOOD CHOICE!  I thought it sounded like it had possibilities, and its totally in my husband's wheelhouse, so I was pretty sure everyone would like it. The boy rated it the lowest at 3.5 stars. My husband hates to give up a, 5 but that was what he was thinking. (He ate two after all;). I was thinking 4-4.5 for the rating, so 4.5 it is. The sriracha honey mustard was really great!  I think it important to have good mustards.  I made my own coleslaw, but didn't measure anything: just some mayo, white wine vinegar, celery seed, salt, pepper and maybe some garlic. (I can't remember)  On the plus side, fast easy, and amazing; on the down side, not exactly diet or healthy.  Sausage Burgers with Sriracha-Honey-Mustard Sauce   1 1/2 pounds ground pork 1 1/2 pounds sweet and hot...

Cheesy Burgers With Soy-Spiked Ketchup

Image
The boy requested burgers, and this was one from Food & Wine we hadn't tried yet. The reviews were mixed in the family. The boy said 4 stars, my husband said 2 and I was thinking a high 3.5. I'm rounding the average to my rating. The husband didn't like it because of the texture. It was billed as a cross between meatloaf and a burger, and my husband thought it disappointed on both accounts. The boy loved it and didn't complain. I thought the texture was a bit too mushy, but really dug the flavor and loved the soy spiked ketchup.  The ketchup is a keeper. Now what else to do with it... Cheesy Burgers With Soy-Spiked Ketchup 1/2 Cup plus 2 tablespoons ketchup 1 1/2 Tbl soy sauce 1 Tbl hoisin sauce 1 Tbl fresh lime juice 1 1/2 Tsp ancho chile powder 1 1/2 Lb ground beef chuck preferably 80 or 85 percent lean 1/2 Cup shredded Colby cheese 1/4 Cup minced red onion 2 Tbl minced kosher pickles 2 Tbl plain dry bread crumbs 3 garlic cloves minced 1/2 Tsp ITab...

Eggplant Veggie Burgers

Image
I saw an eggplant burger on 'The Best Thing I Ever Ate' and thought it sounded like a great idea. They gave you an idea if what was in it, but not the recipe. I decided for meatless Monday, I would take a stab at it. The result?  Tasty and fixable, but the "patty" was more like a paste and didn't stay together.  Even the boy, who is not a fan if eggplant, thought it tasty. His recommendation, which I think is brilliant, was to add some smokiness.  I think next time, I would mix in a drop or two if liquid smoke, but this time he added some smoked salt. I would also add garlic next time. What I'm not sure of is how to get it to retain its shape: more bread crumbs in the patty, breading the patty, more cheese in the patty (maybe even a cheese coating?) or possibly deep frying:)?  So while this tasted good, it is still a "fixable" recipe. Eggplant Veggie Burger 2 good size eggplants diced about 6 cups 2 scallion slice 1 tablespoon of olive oil ...

Salami Provolone Burger

Image
I was feeling kind of lazy, and I had 4 hamburger buns I needed to use, so I decided on burgers.  (only to notice a tiny spot of mold right before cooking and requiring me to make a trip to the store last minute :/)  Feeling extra lazy, I decided to try this Publix Apron Meal .  Now I think the Apron meals aren't bad, but I am rarely wowed by them, so I don't often cook them.  However they are really fast, easy and if you get the recipe they are demonstrating, all your ingredients are in one place when shopping.  This recipe was super fast and easy, even for a burger.  The only change I made was I cooked the cheese and salami on the burgers, on the grill a minute or two rather than just let them sit and melt.  I also used my homemade ranch and added a lot of freshly ground black pepper.  Over all it gets a 3.5  We all said we really liked it, and usually I think that would have merited a higher rating, but we have had some dang good...

Buffalo Chicken Burgers

Image
I asked the boy what he would like for dinner, even repeats, he said Shrimp Scampi!  I said, I have no desire to peel all those shrimp!  He suggested burgers next; I didn't have many 'to try' burgers I was really interested in. Perhaps it was dinner last night at Holligans, a local place famous for its wings, or perhaps it was a vague memory of a Bobby Flay buffalo burger, or perhaps I just had a craving, but I decided on Buffalo chicken burgers. I read several recipes (ok read dozens of recipes), and after consulting with the hubby, we decided on this method. We kind of made it up as we went along, and each step had some debate. (The main one I'm thinking of was I wanted some minced celery in the patty. Yes, I lost that argument ;). We liked the end result, and it was remarkably similar to a wing, but it wasn't a wow meal. The boy said 4, I said 3, hubby said 3.5, so 3.5 it averages out to. The muenster cheese, which we added because we thought we needed some sort ...

Ultimate Sriracha Burger

Image
I have a problem, I adore sriracha!  I want to put it on everything.  I know I am not alone in this, but it is still something I feel a bit guilty over:).  So, when I saw there was a Sriracha cookbook, I wanted it!  I haven't gotten it yet, but his recipe was available as a preview on amazon.  When I saw this burger, I knew I would have to make it and soon.  Problem.  My husband does not share this love.  He is more of a Crystal man.  Not being a fan of Sriracha, he was less than excited to try this burger.  (oh he doesn't like blue cheese either!)  I, however, kind of forced the issue and chose to make this tonight.  I halved the recipe, but at 5 tbsp, I was worried that it would be a little too spicy for even me.  Was it?  No!  My husband, who wasn't expecting to like this much, ate more than 2 burgers!  He felt ill afterward, but said it was worth it.  I really enjoyed it too.  Not as enthusiast...

Turkey Burgers With Spicy Pickle Sauce

Image
My daughter requested burgers tonight. I am, shockingly, running low on new burger recipes.  Ok not exactly low, but I only have recipes left to try are low in interest such as this "bikini friendly" burger.  I am innately suspicious of a 'light' burger.  Despite our concerns, we all liked it way more than we thought we would.  My son even rated it a 5!  Burgers are always easy and this one was no exception.  The most taxing thing was chopping the pickles and peppers.  Next time, I would half the peppers.  It might just be the pickled jalapenos we used, but this was really spicy.  It wasn't unbearable on the burgers, but we did want a bit more of the sauce, but didn't think we could take the heat. Turkey Burgers With Spicy Pickle Sauce   1/2 Cup fat-free plain Greek yogurt 1/2 Cup chopped dill pickles 2 Tbl chopped pickled hot peppers Kosher salt and freshly ground black pepper 1 1/2 Lb lean ground turkey 1 Tsp smoked swee...

Beef-And-Lamb Burgers With Cheddar And Caper Remoulade

Image
These were good burgers.  I am starting with that because now I am going to nit pick the issues I had and want to get it upfront that they were good;).  The English muffins were great for bread, but they got soggy fast with the drippings from the burgers. (I even used 85% lean)  I also would have liked a bit less meat per burger.  The lamb/beef combination, however, was really nice, and the caper remoulade was really tasty. The boy loved the burgers; we all did.  It is just that we have had some outstanding burgers and this one was just really good. Beef-And-Lamb Burgers With Cheddar And Caper Remoulade   4 cornichons coarsely chopped 3 Tbl parsley leaves coarsely chopped 2 Tsp drained capers 1 garlic clove 1/2 Cup mayonnaise 1 Tbl whole-grain mustard 3/4 Lb ground beef preferably 80 percent lean 1/2 Lb ground lamb Kosher salt and freshly ground black pepper 4 English muffins split 4 thin slices of aged cheddar Tomato slices and thinly ...

Stilton Sirloin Burgers With Onion Jam

Image
Since I cooked something special for the boy last night, I asked my daughter what she would like for dinner tonight.  She said hamburgers.  Actually she calls them hang-ger- bergs which we think is really cute and the only "baby talk: we don't try super hard to correct.  Of course she ended not eating any hamburger even though we kept one plain for her.  It was alright.  We have had so many good burgers that we are kind of tough on them.  The boy ate two, so I know he loved them. (he said a 4 out of 5)  Both my husband and I were more like 3.5. Stilton Sirloin Burgers With Onion Jam   2 Tbl extra-virgin olive oil 1/2 large red onion thinly sliced Kosher salt 1 Cup dry red wine 2 Tbl red wine vinegar 2 Tsp honey 1 thyme sprig Freshly ground pepper 2 Lb ground sirloin 4 ounces Stilton cheese cut into 8 slices 8 mini brioche or kaiser rolls split 8 Boston lettuce leaves for serving 1. In a skillet, heat the oil. Add the onion and a p...

Sirloin Burgers With Wasabi Mayo And Ginger-Pickled Onions

Image
These burgers were to be made on Sunday, but I didn't leave enough time for the pickled onions.  As 8 buns come in a bag and I had all the ingredients, we are having burgers twice this week.  (oh darn;)  I was concerned that these were going to be a failure as I tasted the mayo and the miso sauce.  (oh I only found red miso at the local health food store and I wasn't driving all the way down to the Asian grocery to get the white miso called for in the recipe)  Individually they weren't great, but all together on the burger it worked.  Was it our favorite Asian flavored burger?  No that distinction goes to the Asian Style Pork Burgers .  However, they were pretty good. Two things to keep in mind, the wasabi mayo tastes better the longer it sits, so I would make it when you make the onions.  The other thing to keep in mind, the onions need to be made way ahead of time, the day before preferably so plan wisely...

Cheddar Blt Burgers With Tarragon Russian Dressing

Image
These weren't the original plan for the burgers for tonight.  I wanted to make the burgers with the wasabi mayo and ginger pickled onions, but I didn't read the recipe, just the ingredients and the onions needed to pickle at least 3 hours.  OOPS! So I pull out another burger recipe from the to try file and made it instead.  Since I had all the ingredients for the wasabi burger, we will have to have burgers again this week. (Darn;)  Buns come in 8 packs anyways; it's like just good economics to eat them twice in one week.  (just not good health:)  This was just an ok burger.  No one complained, but I found it not that memorable.  So many better better burgers out there.  I will say, the dressing was pretty tasty.  I don't know what else it would taste good on, but for a family that isn't a fan of 1000 island type dressings or tarragon, we were impressed we liked it as much as we did. Cheddar Blt Burgers With Tarragon Russian Dressing ...
