Grilled Salmon with Dill Pickle Butter

I love salmon and pickles, but this one was just 3 stars.  I think the butter had possibility; I think it needed more pickles and some more mustard or some sort of flavoring.  I kept wanting to put more on my fish because I didn't taste anything but salmon and butter.  The bites that had a lot of pickle in it were better.  Still, I can think of at least a dozen truly tasty incarnations of the wild salmon I bought, all better use of my dollars spent on the fish.  Keep in mind it gets 3 stars only because salmon is inherently tasty and the combination of it with the pickle was somewhat novel. Turkey Burgers With Spicy Pickle Sauce

My daughter requested burgers tonight. I am, shockingly, running low on new burger recipes.  Ok not exactly low, but I only have recipes left to try are low in interest such as this "bikini friendly" burger.  I am innately suspicious of a 'light' burger.  Despite our concerns, we all liked it way more than we thought we would.  My son even rated it a 5!  Burgers are always easy and this one was no exception.  The most taxing thing was chopping the pickles and peppers.  Next time, I would half the peppers.  It might just be the pickled jalapenos we used, but this was really spicy.  It wasn't unbearable on the burgers, but we did want a bit more of the sauce, but didn't think we could take the heat. Sirloin Burgers With Wasabi Mayo And Ginger-Pickled Onions

These burgers were to be made on Sunday, but I didn't leave enough time for the pickled onions.  As 8 buns come in a bag and I had all the ingredients, we are having burgers twice this week.  (oh darn;)  I was concerned that these were going to be a failure as I tasted the mayo and the miso sauce.  (oh I only found red miso at the local health food store and I wasn't driving all the way down to the Asian grocery to get the white miso called for in the recipe)  Individually they weren't great, but all together on the burger it worked.  Was it our favorite Asian flavored burger?  No that distinction goes to the Asian Style Pork Burgers .  However, they were pretty good. Two things to keep in mind, the wasabi mayo tastes better the longer it sits, so I would make it when you make the onions.  The other thing to keep in mind, the onions need to be made way ahead of time, the day before preferably so plan wisely...

Harlem Meatloaf

My husband does not like meatloaf.  The only meatloaf he has ever like is the Good Eats Meatloaf I made him try and now it is one of his favorites.  Not only does this recipe for meatloaf taste good because of the flavors in it, but it isn't cooked in the loaf pan so it roasts rather than boils, and it has three sides of glaze!  Any meatloaf recipe I try, I would cook like that, so I was happy to see that this recipe called for the loaf to cook the same way.  I got this recipe from one of my many recipe of the day emails I get; this particular one was from Chow.com.  I thought it looked pretty good and since it used some sausage, I thought my husband might like it.  Well, the issues began as I was shaping the meatloaf, or as my husband suggested 'meat clump'.  It wasn't too bad before cooking, but as it cooked, it morphed in to something very clump like.  In the end, it was alright.  I am not deleting the recipe, but I don't see it getting m...

Dill Pickle Soup

Well I am not a fan of Guy Fieri, but I do sometimes watch Diners, Drive Ins and Dives.  I enjoy seeing the, sometimes bizarre, dishes from little places around the country.  This dish was one of those oddities that I had to try.  I happen to love pickles!  I was the only one in the family that was expecting to like this.  My husband's first comment was. "make that on a night I'm not home for dinner."  Well he was home tonight, and he decided to alter his comment to, "I'm not excited but I am intrigued."    To make a long story short,  it was alright.  The more we ate it, the better it became, but in the end I think the best recommendation I can give is that my husband liked it a lot better than he expected.  I don't plan on keeping the recipe, but I will look around for another pickle soup recipe as It think it has possibilities.  I wish I had read the reviews for the soup before I made it.  I was thinking that a res...

Hamburger Calzone

This recipe was born out of the ever increasing clutter I find in my refrigerator, freezer and pantry.  I don't know how or why this clutter grows; I cook every night.  I realize I do grocery shop a lot, but I use almost every thing I get.  Occasionally, I will have a portion of meat that was a bit more than I needed (like tonight's ground beef) and I will seal it and freeze it for future uses, but I am constantly astounded at the overflow of ingredients.  Anyways, rant over, this is why I just went in there and started using things to get this recipe.  I am a little embarrassed to say I loved it, not because it was bad, but it tasted suspiciously like a McDonald's cheeseburger.  I have a secret love of McDonald's.  When I am eating it, I think this really is garbage, but my mom craved them when she was pregnant with me and I think it is just something written in to my genes that when I see a McDonald's commercial, I secretly want some.  Now I am ...

Israeli Roast Eggplant, Hummus And Pickle Sandwiches

Update:   I had the eggplant, hummus, pickle and tomato/cucumber salad on a pita the next day for lunch and I loved it.  Maybe it was that it was all cold, or the sit over night melded the flavors of the salad,, but I thought it was a million times better the next day. I had such high hopes for this dish.  So may of my favorite things are in it, and it wasn't bad, but the consensus around the table was that it was a 3.  I even went out and bought these Mediterranean pickles I had at a local Mediterranean restaurant to try and make it how it should be.  My issues, since it is my blog and I was the one poised to love it, were that it was a bit soggy, and therefore sloppy, and I thought the potato was useless.  I wouldn't bother with it next time.  I didn't make my own pita and I got the only "sturdiness" available, so that may be part of the issue.  There was flavor, but it didn't deliver like I had hoped.  That aside, we are spoiled ...

Korean Feast

My MIL and her husband were passing through town on their way north.  Since my son and his friend are going to stay with them for a week in the summer, we thought we would invite our friends to meet my MIL's husband.  My friend requested the Korean Pork BBQ recipe.  (Gratefully obtained from another friend)  Now my BBQ is a pale approximation of the way it is made by the friend I got the recipe from, but it is still yummy!  Since we were having a large gathering, I decided to try and make more Korean dishes to accompany the pork.  My friend that gave me the BBQ recipe recommended a Korean pancake to go with it,  Boochimga.  I couldn't find anything with that spelling, but I found 2 recipes for a Korean Pancake.  I made both.  The scallion one was the better of the two.  I also make some quick pickles that I LOVED! I didn't use the kirby cukes recommended, and I didn't seed the ones I did use and they were great.
