Nicoise Salad

I decided to make this because of the lovely green beans I got from Front Porch Pickings .  They were  my favorite part of this salad.  Over all I would give it a 3 (or 3.5) The green beans were tasty and just the right size.  I don't like them when they are woody and these were just right!  The salad dressing was awesome too.  (for the herbs I used 1/2 chives and 1/2 parsley)  Everything else was pretty good.  I personally didn't care for the anchovies just laying on the salad.  I would preferred them in smaller bites.  I ate mine with the eggs.  I am also not a huge fan of hard boiled eggs.  Those two things took away from the salad for me.  I was the person who liked it the best.  The boy and husband are not fan's of 75% of the ingredients.   Nicoise Salad For the dressing 1/4 c  champagne vinegar 1/2 t  Dijon mustard Salt Freshly ground black pepper 1/2 c  extra-virgin olive oil 2 T...

Tuna Niçoise Burgers

I did not care much for this burger.  Surprisingly my husband did.  Why am I surprised?  Tuna and olives are pretty high on his list of dislikes.  For me it was just the opposite.  Perhaps our expectations colored our enjoyment.  I didn't hate it, but have no desire to make it again. We are going to have lots of burgers this week too.  My husband had invited some people over for the Gator game on Saturday, and while there were 8 eating burgers, in a fit of what can only be considered madness, I bought 32 buns. I know you must think I have no understanding of any basic math concepts, but truly I do.  I can't explain what was going on in my brain.  I just assumed it was taking another well deserved break.  Anyways, back to the burger. In summary:  I don't plan on making it again, but it was surprisingly good and different for my husband so I guess I can't really trash the recipe too much:). Tuna Tapenade

Well as we had other plans for dinner tonight, I decided to make my lunch the post.  I am the only one in the house that appreciates tuna and olives so I wouldn't make this for dinner for everyone.  It does, however, make a great lunch for me:).  It is a tuna salad as much as it is a tapenade, but that doesn't make it bad.  I liked it a lot and it was ready in like 7 minutes.  (crostini took a little longer)  It would be a nice appetizer addition to a cocktail party. Easy Tuna Or Chicken Noodle Casserole

Well as the only one who likes tuna, this was one for me only.  The husband was working and I had seen a tuna noodle casserole recipe at the bottom of some recipe I was looking at.  I began craving it.  I am not sure why, aside from the fact that I probably haven't had some since before 1990.  I have to say I liked it.  It wasn't  a blow you away meal, but I went back for more:).  I liked the fact that the veggies sill had a bit of crunch to them.  I cooked the sauce on a little bit lower temperature because I was afraid it would burn as I was multitasking.  I would make it again; the boys would rather that I had hated it. Penne With Tuna And Capers

So this was the first time I made this recipe.  The boy loved it right away.  Even the baby girl liked it.  I wasn't blown away at first, (which surprised me because I love capers and tuna) but the flavor grew on me as I ate it. I believe I got the recipe from one of the several emailed recipes of the day.  (Chow, Fine Cooking, allrecpies etc...)  I made it tonight because the Husband was working and not a fan of canned tuna.  I didn't take a picture because I was told my last pictures weren't good enough to show how it really looked (ahem I'm talking to you my most excellent husband:P), and it wasn't the prettiest dish.  I used whole wheat penne too which didn't add to the eye appeal.  All in all, I liked it because it felt light, it was something I can make out of ingredients I always have on hand, and it was fast.  All making it for a good weeknight meal.    Penne With Tuna And Capers     3/4 lb penne ...
