Salmon In Lemon Brodetto With Pea Puree (TBT)

This throwback Thursday was picked by  husband, but my son's favorite fish is salmon.  (maybe even favorite protein)  Just be careful, it's easy to put too much of the brodetto and this isn't soup;).  This time the dinner wasn't as picture worthy as the last time I made it, but just as tasty.  I can't get over the pea puree.  It is amazing!   This time the picture looked bad too. It is also because of my over ladling of the brodello.  Oops!  In the end, this dish is good ( good enough to be one of the first to be repeated), looks pretty, easy to make, and is a little different. Another pin from Pinterest tonight. It turns out it is a recipe from the same blog that I got one of my all time favorite recipes: Teriyaki Salmon with Sriracha Cream. The sriracha cream is quite possibly the most perfect sauce ever!  The blog is called Damn Delicious. I am going to have to have a good look through it, soon. This pancetta fried rice was really great. A solid 4.5 from me, the boy was hovering between 3.5-4. The hubby wasn't home so we don't have his rating, and except for the scallions the girl liked it too!  Not only did it get high marks from everyone, it was easy to make, and inexpensive. The hardest part was the chopping/grating before the cooking. That could always be done ahead of time and then dinner would take like 15 minutes. I made extra rice when we make the poblano chicken so I had the 3 cups of cooked rice already cooked and measured out. Even with the chopping and egg cooking, it came together really quick. My husband picked out this recipe from my chicken board on pinterest.  Why?  Well when he first went off to college, he took his mom's Betty Crocker cookbook and this was the first meal he meal he made out of it.  He thought it was wonderful then and wanted to try it now.  The original pin went to a Martha Stewart recipe .  And while I have had a few of hers I liked, there have been some stinkers too.  You can imagine my concern when I saw some reviews that likened her recipe to hospital food!  One reviewer said Giada's was better.  A quick look at her recipe showed me that I had all I needed and it did indeed look like a superior recipe.  Now the Martha recipe called for rotisserie chicken, which I bought, so I shredded that instead of cooking the chicken like recommended in this recipe. I also halved the recipe and cooked it in an 8"x8" pan.  It was way more than the four of us could eat and we ate hearti...

Mosaic Pasta

For meatless Monday, I turned to a awesome little book my MIL gave me: Sauces for Pasta .  This one jumped out at me because it said not for people counting calories.  My MIL had just left after a lovely "staycation" and we had eaten decadent foods all weekend and I thought well hell we can can be healthy tomorrow;). I have been miserable, unable to move with an extremely painful headache.  I thought perhaps I was finally finding out how terrible a migraine was.  It had gotten steadily worse over a week; it was to the point all I could do was lay down with a cold cloth over my head and no pain medicine made a dent in the pressure and pain.  I tell you this to explain my absence from blogging and to warn you that even if you have only a headache, it could be a sinus infection!  I went to the doctor today and was given an antibiotic.  It has totally made an incredible difference in the first 24 hours!  I also tell you so you can again appreciate my wonderful husband who not only took care of me and the kids, but cooked a new recipe so there would be an entry for tonight.  Needless to say, I wasn't very hungry, but the wonderful smells coming from the kitchen were awakening the beginnings of an appetite.  The only change we made was we used a jalap...

White Acre Peas

Ok, so I am like three days behind on getting my posts done and life is not complying with my requests for a break so this one is going to be short:).  I really liked the peas.  It was a very simple preparation that allowed for you to enjoy the natural flavors of the pea.  I started by cooking them half the time recommended because I don't like mushy peas.  However, after a few bites, I realized they were underdone.  Cooking them the full time was required. I had some things I wanted to say so, if you just want the tasty recipe and my thoughts on it, skip down to the last paragraph:). I started this blog over a year ago for several reasons. These reasons, in no particular order, were to: share recipes with friends, push myself out of my comfort zone recipes, keep myself on track with a year of different dinners, and to promote eating meals together.  That last reason, while extremely important to my family and myself, seemed to be missing from the blog posts.  I found a page on facebook called the Shared Meal Revolution , and I was glad to be reminded of this vital part of the meal: the companions.  Until the last few years, our family meals were not a priority.  My husband works odd hours sometimes and not available for dinner. I was apprehensive about the mint in the pea puree but other than that I was excited to try this dish.  The pea puree blew me away.  I couldn't believe that I liked it as much as I did.  My husband thought it was a bit sweet on its own.  However, when you put it all together it was, incredible.  Each bite that had some salmon, puree and lemon sauce was better than the sum of its parts.  If I were to make any criticisms of the dish, it would be that I thought the sauce was a bit thin, like broth.  The consensus is that it was DELICIOUS!
