Honey walnut shrimp

I totally expected this to be too sweet, and while it was, we all still really liked it more that expected.  It wasn't hard and it was a nice way to shake up a dinner rotation.  I added sriracha to the mayo mixture and sprinkled scallions at the end.  I recommend you do too:).   Honey Walnut Shrimp http://damndelicious.net/2013/07/16/honey-walnut-shrimp/  

Ravioli In Mushroom-Walnut Cream Sauce

I found this recipe in the to try file and it looked good, and was quick and easy. Perfect for meatless Monday. Now that mushrooms aren't a veto ingredient for my son, I was totally psyched to have this.  I searched for the source of this recipe, and i found it on the olive garden website. This wasn't where I got it from, but it read identical. While this wasn't an omg dish, I totally dug the heavy mushroom content.  I said 3.5. The boy, who still doesn't like mushrooms, said 2.5. My husband started out at rating it a 3, but when I saw him scraping his plate to get the last if the sauce, he agreed it was a 3.5.  I'm fully aware that my love and lack of mushrooms skewed me in favor of this dish. I made sure to stir the mushroom/walnut mixture. I was afraid it would burn the nuts. Spaghetti With Wilted Greens And Walnut-Parsley Pesto

For meatless Monday, I am making something I saw on Pinterest, and since my Husband won't be home for dinner, something extra 'healthy' that he most likely wouldn't like.  He doesn't need to eat light; he is one of those annoying people who can eat anything, never exercise and stay thin.  (Ugh I know!)  Now I put healthy in quotes because while the original recipe was from health.com and fairly light, I did add some fat and salt. (blush)  I did this partly because I didn't thoroughly read the recipe and partly because I knew it would need it.  How did I diverge from the recipe? I have had a lot of fun blogging the past 18 months or so but  I enjoyed trying all these new recipe (and revisiting some oldies), but also I love that I have found a lot of cool people with cool food blogs. (although I am annoyed with my phone for making it impossible to comment on the blogs, and I rarely use the computer) I tried a recipe tonight from a blog I love, and suggest you check out: Happy Valley Chow .  I knew this recipe seemed made for my husband.  With the exception of blue cheese, every ingredient is one he loves, its PIZZA, he went to Penn State and he loves the Rolling Stones.  I am not a fan of sweet and savory (nor apples in particular) but I thought this might be something I would like too.  It was quite good.  My husband and son loved it; I liked it despite the fact it had apples on it.  I personally would have liked a tad more cheese, but I did go light on...

Tonight's recipe was a hit in every way but one, and that one miss only really bothered the particular aesthetics of my husband.  His complaint was that the beet greens imparted an unnatural color to the goat cheese and that the resulting tint of sauce and pasta was a color not to be achieved in nature.  And while it is true that it looked unnatural, as a good wife, I refrained from pointing out that nature did achieve this color. (well refrained until he reads the post ;)  It was pretty easy too.  The steps were a bit many: two roastings in the oven at two temps, boiling pasta and sauteing the veggies and the prep work, but it still wasn't every time consuming.  If you plan it right, it comes together very quickly.  It takes some knowledge of you equipment.  For example, the pot I was using to boil the pasta in seems to take forever to come to a boil.  It is the only one but it was also the only appropriately sized vessel that was clean so ...
