Thai Curry Turkey Burgers

Image
It's like the chicken and the egg question. Am I slacking on the blog because I have been repeating, or am i repeating because I have been slacking either reason, the family is happy.  These haven't. Even made in a while and I was interested to see if they where as good after a year and a half of new food. It so good!  It might even have been better. The combo of the red thai curry and turkey is wonderful! Thai Curry Turkey Burgers 1-1/4 lb. ground turkey (not ground turkey breast) 2 Tbs. red or green Thai curry paste Kosher salt and freshly ground black pepper Vegetable oil, for the grill 1 medium lime 2/3 cup mayonnaise 3/4 cup thinly sliced seedless cucumber 1/4 cup fresh cilantro leaves 1 small shallot, thinly sliced 1 Tbs. seasoned rice vinegar 4 sesame seed hamburger buns Sliced tomato, for serving Prepare a medium gas or charcoal grill fire. In a medium bowl, gently mix the turkey, curry paste, and 1/4 t...

Thai Ground Pork Salad

Image
We loved dinner, despite the fact that just now, I am realizing I omitted the peanuts by mistake.  It was fast, easy and a great dinner on this hot summer night.  The only thing I think you should take care to do, is to make sure to really break up the pork in to small pieces.  Not only does that insure cooking it all the way through, but the size works best in the fragile lettuce leaves.  I made the boys rice to go with it, but I didn't need it.  My son and I both rated it 4 stars, and my husband, who ate it reheated, loved it but wouldn't rate it as he tried it reheated.  It would make a great appetizer too.   It was a super simple take on the more laborious chicken lettuce wraps. Thai Ground Pork Salad 2 Lb ground pork 2 garlic cloves minced 2 small shallots minced 1 large jalapeño seeded and minced, plus sliced jalapeño Juice of 1 lime plus lime wedges, for serving 2 Tbl Asian fish sauce 1 Tsp light brown sugar 1 Tsp Sriracha (chil...

Pad Thai Popcorn

Image
I saw a video on one of my food related Roku channels (this one was on allrecipes too) for this Pad Thai Popcorn and I was totally intrigued!  We really like popcorn, we have it most nights as our pre bedtime snack, and this looked amazing.  It was a bit more work than I would like to put in to a snack, and it was more sweet and not as spicy as I would have liked it, but the more I ate, the more I liked it.  It won't make an often appearance in our house, but I am keeping the recipe and want to play around with it. Pad Thai Popcorn 1 Tsp vegetable oil 1/3 Cup unpopped popcorn 1 Cup chopped dry-roasted salted peanuts 1/2 Cup packed brown sugar 1/4 Cup vegetable oil 1/4 Cup corn syrup 2 Tsp lime juice 1 1/2 Tbl fish sauce 1 Tbl sambal oelek (Thai chile paste) or -plain hot sauce 1 Tbl grated lime zest 1/4 Tsp baking soda 1/4 Cup chopped cilantro 1.Preheat oven to 250 degrees F (120 degrees C). Line baking sheet with foil brushed with oil or ...

Five Spice and Hoisin Glazed Chicken with Stir-Fry Bok Choy In ThaiGarlic Sauce

Image
I decided to make something up for the chicken legs I got for my boy.  (he loves drumsticks)  Since I was planning to make the Thai Bok Choy recipe tonight, I opted to make it similar to the chicken and 40 cloves but seasoned with five spice and end it with a quick broil with hoisin sauce to make a glaze.  I am not a fan of meat on a bone and I thought it was pretty good.  The boys loved it!  It was very easy but it does take some time.  It is inactive time and you could leave it unattended for a bit. (like to pick up a child;)  If you aren't familiar with five spice powder, it does take some getting used to.  The cinnamon particularly makes me think of desserts and it can be odd the first time you try it. (or first few times)  Once you are prepared for it, it makes for an amazing dish. The hoisin, one of my favorite Asian sauces, is perfect for glazes.  It is thick and a little sweet. If you are making the bok choy only,...

Thai Chicken Pizza

Image
I haven't had Thai Chicken Pizza in quite a while. I loved it then. I wasn't really a big fan of this recipe. It reminded me of that recipe I enjoyed so many years ago, but it just wasn't as good. It had a lot of the right flavors but not in the right proportions. The sauce was way too sweet, thick and rich. I even used much less than the recipe called for but it was too much. I cheated a bit and bought deli chicken tenders and the breading was good at absorbing and taming the sauce's overwhelming flavors.  I also discovered that for the first time in how long, I didn't have scallions, so I used thinly sliced onion.  It wasn't horrible, but I don't see us making this particular recipe in the future.  I have a different recipe for a Thai peanut sauce that I think would taste better.  My husband like it better than I did, so maybe I am being a little harsh. Easy Thai Grilled Eggplant

Image
I had a variety of gorgeous eggplants from my Front Porch Pickings basket.  I decided rather than puree these beauties into Baba Ganoush, which everyone would eat, I was making them all for me.  I had been wanting to try this recipe anyways.  The sauce was good but very garlicky, so go light.  The biggest issue with the dish was totally my fault.  Some of the eggplants in the basket were babies and not ideal grilling fodder. That kept the recipe from being great.  I also hate to not to do justice to a great product so that's a double grrrrr for me.  Oh added bonus, the high sugar content of the sauce make it quite a chore to clean up the grill. (or grill basket as in my case) Easy Thai Grilled Eggplant 1 Chinese eggplant (other types of eggplant will work too) 4 T soy sauce 4 T oyster sauce 2 T fish sauce 2 T brown sugar + 1-2 more tsp. 7 -8 cloves garlic, minced 1 fresh minced red chili,OR 1-2 tsp. chili sauce (optional) 2 T w...

Red Curry Shrimp

Image
I am fighting the urge to go to the grocery.  I have plenty in the house, but not everything I need for recipes I want to try.  I am determined to use up what I have before I start new recipes.  I do have two recipe ingredients, but I need to use up leftovers too. So, I made a red curry shrimp.  There was a small portion of frozen shrimp I "cleaned up."  I had some random veggies that I could use up and I had half a can of coconut milk in the freezer.  I also had some plain orzo pasta that I used in place of rice. Basically I put the coconut milk with some vegetable broth and heavy whipping cream (to make up for the part of the can of coconut milk I had used) with some red curry paste. (about a 1 1/2 tsp)  I simmered that for about 5 minutes.  I then threw in (all diced): 2 stalks of celery, 1/2 bell pepper, a hand full of baby carrots, a hand full of onion, and the stalk of a broccoli floret (peeled). I also put a about a tablespoon of fish sauc...

Sick Day

Image
OK so today I am miserable.  I have a fever, stuffy, sinus pressure, neck feels like I have been beaten and sore throat.  My husband, being the kind man he is, suggests eating out.  My thought, lets get take out.  I don't want out of my pjs and I can't smell, so I can't taste anything.  After much debate, a debate that involved numerous variables, we decide to have Thai.  Just so you can appreciate the length and scope of this debate, here are but a few of the variables: what do I feel like eating (me: nothing, him: somewhere nice for me), where do I feel like going (me: nowhere him: ditto), take out? (me: anything, him: most food doesn't travel well).  OK so I decide to get dressed.  The only opinion I can muster is that Thai food might have enough flavor to penetrate my taste buds despite my inability to smell.  The snafu, my daughter is allergic to peanuts.  Well we ended up at Thai, which we all enjoyed.  The girl enjoyed her ne...

Salmon with Thai Rice Salad

Well tonight my family had this.  It is a favorite of the boys. I, however, went out with some of the girls to the Ormond Wine Co.  We had lots of great cheeses, flatbreads and wine.  We were loud and laughed too much but don't really care.  It was just too much fun!  I did prep everything for the dish in advance.  That way my husband only had to cook the rice and salmon when they were ready to eat.  It is a nice dish because it is easy, light and great for summer because it isn't really hot.  It is fairly low fat and it is fairly low calorie.  My husband did NOT take a picture so I get to give him lots of grief which is in its self its own reward;)  Salmon With Thai Rice Salad  4 Servings   1 1/2 c  long-grain rice       3 T  lime juice (from about 2 limes)       3 T  Asian fish sauce (nam pla or nuoc mam)       2 T...
