Snapper with Spicy Crab and Andouille Sauce

Well the husband is a raving lunatic about this dish!  Best I've ever had, fish dish, meal ever!!  This is it the recipe to end all recipes.  Well at least according to him it is.  My husband was in charge of the grocery shopping.  He was shopping for the roast sea bass we had last night, and when there was no sea bass, he asked about substitutions, to which the internet replied and I filtered down to tilapia or snapper.  We had some tilapia so I didn't think he bought snapper and when I cooked last night, I used the tilapia never seeing the snapper.  Well now I had these lovely snapper fillets and no plan.  A quick pinterest and food and wine search turned up this dish.  It was a happy accident because as you read above my husband really lost his head over this dish! Mrs. Duvall's Crab Cakes

I made these years ago. I'm talking 10-12 years ago. I remembered loving them then.  While, I have grown, food wise, since then, I did still really like them.  They are, like all crab cakes, dependent on the quality of crab you are using. I totally splurged and spent $20+ on the meat.  That keeps this from being a regular night dinner. I needed 3 of the containers the crab came in, so I got 2 fancy jumbo lump and one more reasonably priced one. I think that worked well. We had all the nice lump crab that makes for a great crab cake, but also some of the smaller pieces to help fill in the cracks and assist the mayo/egg binder.   I think the crackers make a fine breading for the cakes too.  Oh and yes, the recipe comes from actor Robert Duvall's mom. Crab And Ricotta Cannelloni

I forgot to put the basil in the filling, so we put it on top. Meh!  I didn't read the reviews of this dish because it was from Giada De Laurentiis  and her recipes almost never disappoint, this one wasn't so great for me.  I did add some garlic to the Béchamel and I think the sauce was ok, but there was a ton of it for the amount of pasta and the cannelloni was just alright.  I didn't pop for the really expensive crab that I would have had to shell myself because we are covering it with at ton of sauce and that would have been a waste, but I didn't by the cheapest crab either.  It was an expensive plate of blah.  I wouldn't mind playing around with the dish,  so I deem it fixable.  I think loosing the seafood and replacing with veggies would make me like it more.  So we will see if I ever get around to playing with the fixable recipes;). Savory Bacon And Crab Bread Pudding Eggs Benedict

I saw this on the allrecipes Roku channel.  I thought it looked like my kind of recipe and the chef on the video said that it was one of the best things he had, had in a long time.  Now, I have always thought of allrecipes as for your average cook.  I thought of it as a collection of recipes that either instructed one on how to make a basic dish or how to make that known dish a little different.  (like with this Benedict over a bread pudding.)  Since I love crab, hollandaise and eggs, I figured this would be a slam dunk.  That was not exactly the case.  While the finished product wasn't terrible, it wasn't a "jump up and down meal," and that was from my husband, the person who liked the dish best.  I thought it ok, but was really annoyed with the way the recipe was written.  I know how to make Hollandaise and poach eggs, but "Hollandaise" and "poached eggs" as ingredients is kind of BS.  I can only assume they thought I would b...

Crab Cakes

The measurments for this recipe are approxomate.  I should know, I made it up:).  Yes it is based on many recipes we have tried before, but this is my own improv one night, and we wrote it down becasue we liked it.  All the amounts are based on large veggies; I often add more than the recipe says just to add more veggies to the diet.  This time I used the el cheapo crab; the kind that looks like string.  I thought, it's a cake, does it really need to be the fancy kind?  Well it really should, but the trade off made for some very smooth cakes!  I took last night's cuke relish and mixed in some mixed greens and it made for a very tasty salad.  I had some left over pasta; I tossed that with some butter, parm. cream and garlic as a starch for the boy.  I took a smidge.  (only in the intrest of learning if it worked well mind you;) Of course it is a keeper, I made it up.  However, I always play with my recipes.  Crab Cakes 2 Serv...

Buttery Crab Bread Pudding

Pretty? Yes.  Labor intensive? Yes. Fattening? Yes. Delicious? Maybe.  I am pretty annoyed that I popped for the expensive crab from the seafood department from Publix, ($26) and the crab tasted weird.  I did get it in a container as opposed to the legs in the case, but I didn't want to have to crack crabs as part of making the dinner and I figured this would taste better than the canned stuff.  I think the canned would have been better.  I think this combination of butter, eggs and crab would have been a stellar meal, but the crab here really killed it. I think I will put this in to the fixable file, but I don't know when I will make it again. Maybe one day? Surf and Turf Salad

Well the boy asked for crab legs tonight. I so wanted to get them for him, but at $10.99 a pound, I wasn't going to make them the entire dinner.  SO, since it is soccer night, and our traditional soccer night meal has been grilled steak salad, I decided to do both.  We made the salad and I got a couple of clusters for him. (we helped:)  In retrospect, the steak was pretty pricey too, but I know it was much less than I would have spent on the crab. With the leftover steak, he will be having steak and eggs for breakfast.  Best thing about the meal, which made the extra I spent on the crab totally worth it, was to see the grinning gusto with which the boy ate his crab!  I would have spent millions on that.
