A New-Look Bloody Mary

Image
Well after that last Bloody Mary, I have rediscovered my love for them! I have always thrown some traditional ingredients in to some tomato juice, but I thought I would poke around for a recipe. I really liked this one. The curry in was noticeable but not overwhelming. This was a tasty take on a Bloody Mary! My only complaint was the let it sit overnight! When I was mixing this up, I wanted it then, but I do think that the overnight sitting in the fridge helped blend and mellow the flavors. A New-Look Bloody Mary   4 Cup tomato juice 1 Cup dill pickle juice 1/4 Cup fresh lemon juice 1 Tbl prepared horseradish 2 Tsp Worcestershire sauce 2 Tsp curry powder 1 Tsp Sriracha 1 Tsp kosher salt 1/2 Tsp celery seeds 1/4 Tsp black pepper 2 Cup vodka 8 celery stalks 8 lemon wedges Preparation Combine first 10 ingredients in a large pitcher. Chill overnight. Add vodka to pitcher; stir well. Fill tall glasses with ice. Divide Bloody Mary cocktail among glasses. Garnish ea...

Curried Carrot Soup

Image
My darling husband had a wisdom tooth extracted this morning, so I planned on making soup for him for dinner.  Turns out, he can't have any hot foods today, so he had to eat it room temp.   Luckily, the instructions said that it could be served cold.  Now, I hated this soup.  I am not a fan of carrot and it was very carrot-y.  I ate it, but I deleted the recipe.  My husband thought it ok, but the boy liked it and told me to keep the recipe.  (shhh don't tell him that I didn't;)  It was easy to make, I will give it that.  If you adore carrots, then you will like this. Curried Carrot Soup 1 T  canola oil 2 t  curry powder 1    medium garlic clove, smashed 1    (1/2-inch) piece ginger peeled and smashed 1/2    medium onion, coarsely chopped 1 lb carrots, peeled and sliced into 1/4-inch-thick rounds 1    medium bay leaf 2 1/2 c  low-sodium vegetable broth...

Curried Spaghetti-Squash-And-Chickpea Toasts

Image
As you may or may not know, I get a by monthly delivery of local, organic produce from Front Porch Pickings.   I was also honored to be picked to write recipes for their news letter on those same weeks.  I gave them the spaghetti squash frittata recipe I love, but also looked around for some more unusual applications for the spaghetti squash.  I happen to really like Indian spices and I think they go  well with the sweetness of the squash, but this recipe I hadn't tried yet. I liked it but I was sad that the squashes natural delicious flavor was smothered by the heavy spices.  I think it would make a lovely vegetarian meal and for a pretty healthy meal it was really tasty.  I think that the mixture would be nice over rice. We had this with salad, rice and I made 2 steaks as my husband, father and son prefer having some meat, but as there were only two we all had nice small portions and filled up on the toasts and the salad (with some very tasty peppers an...

Red Curry Peanut Noodles

Image
This was in the folder of my son's favorites.  It was made a long time ago and quite frankly neither my husband nor myself remembered it, so how good could it be? It was pretty good.  Not a rave review but good, fairly healthy and quick.  It could have easily been made vegetarian by switching the stock for vegetable broth.  I think it needed a good dose of lime juice, soy sauce and hot sauce, but that made it quite good.  It is not a hot dish which wasn't the best idea on a cold night, but hey we have heat:) Red Curry Peanut Noodles 3/4 lb whole-wheat spaghetti 1/2 c  smooth peanut butter 1 1/2 T  fresh lime juice 1 T  red curry paste 1/3 c  chicken stock or low-sodium broth 1/4 c  plus 2 tablespoons packed cilantro leaves Kosher salt 1 c  mung bean sprouts (2 1/2 ounces) 2    scallions, white and green parts quartered and thin 1    carrot, coarsely grated 1/3 c  salted, roasted peanuts, ...

Best Ever Chicken Balti

Image
This was so AMAZINGLY tasty.  I can't recommend enough trying this dish.  I plan on making and freezing the sauce just to have it on hand.  I can see it working with all kinds of proteins.  I know Indian food can be daunting, but this one is not only easy, but doesn't require lots of hard to find ingredients.  We ate it with naan and broccoli.  I can't stop thinking about it! I plan on giving some of the jars of sauce as a gift. Best Ever Chicken Balti  4 Servings 4    -6 boneless skinless chicken breasts 1 t  chili powder 1 1/2 t  garam masala 1 t  minced garlic 3 T  tomato puree (I used a very plain jarred tomato sauce I had in the fridge) 2 T  Greek yogurt (10% milk fat!  Heck ya!) 2 T  chopped fresh coriander (that is cilantro to us in the US!) 2 T  mango chutney (I used major grey's mild) 1 t  salt 1/2 t  sugar 4 T  oil 2    green chilies, chopped (...
