Sautéed Brussels Sprouts with Bacon Sherry Cream

Where to begin?  Should I start with the great Brussels sprout debate, or dive in to what I am really about, an unabashed love letter to these sprouts.  I can’t argue with the practice of adding  bacon and cream until you like the veg :). I happen to like Brussels Sprouts but even the die hard haters seem to enjoy this dish. Everyone insisted it become a Christmas menu regular. I could totally wax loquacious about Brussels sprouts drenched in a bacon cream sauce! 😍 I wish I could convert you as well. Caramelized Brussels Sprouts With Pancetta

I happen to be one of those people who love Brussels sprouts, my husband didn't think he did until I made a shredded version for him.  I was excited to try this, and I loved it, but the most pleasure I got out of the dish is that my 11 year old has changed his veto ingredients.  They were cauliflower and mushrooms (two of my favorites) but he decided that Brussels sprouts will replace mushrooms.  Callo-callay, oh frabjous day!!! MUSHROOMS ARE BACK ON THE MENU!!!!  So chalk up another reason to endear this recipe to my heart!  He had to eat them tonight.  No veto change occurs on the night its requested;  that prevents miss use;).  If you are a cabbage hater, you may not love this recipe for texture reasons alone, but the caramelizing does temper the bitter and what doesn't taste better with bacon (or pancetta).  If you are leery of these sprouts, and are willing to give them a shot, maybe build to them in their whole form. Poached Eggs With Creamy Brussels Sprouts And Bacon

I thought it looked best without the parm, but it tasted better with ;) Tonight's dinner was wonderful.  If you think that you are not a fan of Brussels Sprouts, you haven't tried them shredded and or with bacon!  They were wonderful.  I had made something similar a long time ago with bacon and tomatoes.  Loved it then too.  If I were going to make any changes to this, I think some pureed tomatoes would be really good, but hardly necessary.  Eggs are always a quick fix for dinner, but what I like about this dish is that it is an all in one deal.  You have your protein, carbs and veg all in one tasty dish.  Poaching eggs takes a bit of practice to keep them from being a bit scary. (well for me at least)  I have had a lot of practice poaching eggs recently, as my three year old daughter prefers her eggs poached.  (ok there is a small down side to having kids that like a variety of good foods.  I remember my son in second grade wa...
