Waffle Bar

School is out and I decided to make a labor intensive breakfast I don't usually have the time or inclination to do. I opted for homemade waffles. (No mixes!). Turns out they aren't that hard to make and in the time I had before I was planning to wake them up, I made whipped cream and a strawberry syrup and waffles became a Waffle Bar.   I put out the traditional maple syrup, honey and softened butter as well as fresh blueberries.  It was fun to make each quarter of out waffles in to new and different combinations.   The strawberry syrup was a big hit. (Totally made it up and it was almost all fruit.) Corned Beef Hash with Fried Eggs

My faithful readers will know I kind of dig breakfast for dinner.  (embarrassingly I just realized the last post was a breakfast for dinner one.  The perils of not keeping up with the blog)  Not only do I love how quick they are, but I adore a runny yolk :).  My boys adored this. I only had one complaint, I would have chopped the corned beef finer. The potatoes cooked down into almost mashed potato like consistency and the chunks of beef were texturally not perfect. ( at least for me. The boys didn't complain:). Perfect Pancakes

As you may know, I really like having breakfast for dinner.  Not every day, mind you, but every now and then, I love to have the kind of breakfast that isn't really practical for a regular weekday morning.  Today's installment of  breakfast for dinner was pancakes.  I got this recipe from the pioneer woman via pinterest.  I have to insist that you serve it with real butter and real maple syrup.  I wanted fluffy whipped butter, and salted butter at that, but I only had unsalted sticks, so I poured some heavy whipping cream in a jar with a good bit of salt and set the kids to shaking.  While it isn't proper butter, it tasted a lot like it and was the perfect light fluffy consistency of whipped butter.  And truth be told, it was easy enough for morning time too.  I made the whole batch and froze the extras in plastic bags with wax paper between them.  I have reheated them with the toaster oven and the microwave.  They aren't pe...

Ham & Cheese Strata

Christmas evening, it was just the four of us.  We had my husband's side of the family last night, and my side of the family tomorrow, so dinner will just be leftovers, but since we still had my inlaws  this morning, we made this yummy ham and cheese strata for breakfast.  It could even be made the evening before, but then it would take longer as it will go in the oven much colder.  It isn't that much work, and it bakes in 20 minutes!  (well mine took a bit longer than that.)   Ham & Cheese Strata   8 large eggs 1 1/2 cups milk 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 4 cups Italian bread cubes (1 inch) 6 ounces Virginia ham, cut into 1/2-inch dice (1 1/2 cups) 6 ounces Gouda cheese, cut into 3/4-inch dice (1 1/2 cups) 1/2 cup julienned sun-dried tomatoes, drained 1/4 cup plus 1 tablespoon snipped chives 1 cup coarsely grated Cheddar cheese (about 4 ounces) 1. So, it's the Sunday before the kids go back to school.  I want it to be an awesome, laid back kind of day before the early morning tomorrow.  (well laid back for them since I'm doing the work;)  I also let them have a repeat for dinner tonight and my son choose the Ultimate Sriracha Burger.  (good choice)  I saw this syrup on pinterest and said I have buttermilk I need to use, why not?!  I know the kids were clamoring for my famous sprinkle pancakes.  (actually a friend of mine made them first, but my son's friends and cousins adore them and I have to make them if they are here for breakfast.  It's only as taxing as regular pancakes, which for some reason I find very taxing.  Perhaps it is because I'm most emphatically not a morning person and I feel there is something obscene about working that hard with a cup of coffee in hand.  Now huge amazing breakfasts I have no issue with, just so long as someone else is cooking and cleaning...

Biscuts and Sausage Gravy

I worked as a server in college at a Bob Evans.  Even though I think they are just a mini step above fast food, I still do like their sausage gravy.  My son LOVES it.  I decided to try an make a sausage gravy for him today.  Now, while I am from just about as south as you can get in the US, southern Florida is most definitely not 'the south.'  I didn't look up a recipe, I just kind of did what I thought should go in to a gravy, so if I made any cardinal sausage gravy sins, I apologize.  The end result was very tasty. I loved the flavor the wine & herb chicken broth gave the gravy. I am making this for my mom when she gets here with the other half of the sausage.
