Korean-inspired Burgers with Kimchi and Sriracha Mayo

I neglected to save the address for this burger, so my apologies to the blogger for not being able to send readers to their site for the recipe.  The burgers were good, but I thought missing something.  I decided it was the Swiss cheese I bought for this, but isn't in the recipe, and so was left off when I did the actual cooking.   Despite the feeling it was missing something, it was still pretty good.  Best thing about this recipe is that my son, a very vocal kimchi hater, loved it and had no idea there was kimchi in it and I got to say I told you so:). Ahh these throwback Thursdays are teaching me about the fallibility of memory. This ranked among the top 10 things we ever made, and was a strong contender for #1, and it was still delicious, but it didn't neatly make me faint and cry with joy the way I  remembered it.  My boy, who picked this TBT dish, still proclaims it a 5 star dish! My husband too.  I really enjoyed it and truth be told the sriracha cream does still make we weep with joy, but I was a smidge disappointed. Perhaps, in the exalted perfection of memory, I set my expectations too high. I shouldn't be complaining, it was a fine, nay excellent dinner, but I had put the memory of it on so high a pedestal, I should have known, it was going to lose in the comparison. I hope I haven't put you off the dish with my lamenting my first world problems. It is an outstanding dish.  It looks pretty too. Soy-Sriracha Pork Loin

I couldn't find where I got this recipe from, so I can't provide a link, and I'm kind of glad because it was pretty bad!!  I knew it was going to have problems. (Tenderloin in a crockpot is not the best way to cook that piece of meat!). However, I was blinded by the word Sriracha!  I added a lot more brown sugar in the reduction stage, but it was still really spicy. I think it could be better with some fresh ginger, and the sauce tweaked. I also would use a cheaper cut if meat that would add some fat and flavor to the sauce.  I want to say one star, but I will round up and give it 2. Soy-Sriracha Pork Loin 1 Tbl chopped garlic 1/2 Tbl brown sugar 1/4 Cup soy sauce 1/3 Cup sriracha 1/2 Cup chicken or vegetable stock 1/2 Tsp honey 2 Tbl chopped green onions 1 Lb  1 lb of pork loin (I cut a two -pounder in half) rub pork loin with garlic and brown sugar. Sriracha Salt

I wanted a way to get sriracha on to popcorn.  I did see a way to dehydrate the sriracha in to a powder, but this salt looked much easier. It isn't quite strong enough for my taste, but my husband thinks it is "goldilocks"  (that is just right for you non science buffs)  I made it with kosher salt and then put some in the spice grinder to make it fine enough for popcorn. It was so easy, I started playing around with other salts too.  I made a lime one with some fresh lime juice and kosher salt.  I started small with the juice, but it really needed a lot to get any lime flavor on the salt. It was very wet and I stirred it often, but the end result was really good.  Margaritas anyone? ;)  I also made some with table salt and liquid smoke.  My son loves it.  I was thinking maybe mixture of sriracha and smoke for a bloody Mary? Ultimate Sriracha Burger

I have a problem, I adore sriracha!  I want to put it on everything.  I know I am not alone in this, but it is still something I feel a bit guilty over:).  So, when I saw there was a Sriracha cookbook, I wanted it!  I haven't gotten it yet, but his recipe was available as a preview on amazon.  When I saw this burger, I knew I would have to make it and soon.  Problem.  My husband does not share this love.  He is more of a Crystal man.  Not being a fan of Sriracha, he was less than excited to try this burger.  (oh he doesn't like blue cheese either!)  I, however, kind of forced the issue and chose to make this tonight.  I halved the recipe, but at 5 tbsp, I was worried that it would be a little too spicy for even me.  Was it?  No!  My husband, who wasn't expecting to like this much, ate more than 2 burgers!  He felt ill afterward, but said it was worth it.  I really enjoyed it too.  Not as enthusiast...

Update to the original post that follows: I made this with fresh ginger, a slightly thicker piece of salmon than last time, baked it in a rimmed baking sheet for 10 minutes at 400 and then spooned some of the marinade it was cooking in over the top and broiled it for about 2 minutes and it came out perfect.  It was one of the most amazing meals.  We had company and everyone loved their dish.  5 stars all the way!  I also made extra of the sauce, which I adore, and found out the next day it makes a tasty salad dressing if you can handle the heat Tonight, I decided to dive into my thousands of pins on Pinterest and take the first step in my very long journey to get through them. Sriracha Bloody Mary

For me, a Bloody Mary isn't just a drink, it is an appetizer!  I love to load it up with all kinds of nibbles: olives, salami, cheese cubes, shrimp, and any pickled veggie!  I did use some restraint tonight as we were about to have dinner and the cocktail is filling by itself!  I think of it sometimes as meal replacement shake;).  Now I adore Sriracha, but I haven't ever had a 'recipe' to follow for it's use in a Bloody Mary before.
