Quick Chicken Tikka Masala

I had chicken in the freezer and fresh turmeric in the fridge, so this recipe jumped out at me as the one to make.  Other than the turmeric wanting to stain every surface in the kitchen, this wasn't a hard dish and was really yummy.  I had chicken breasts, so they were cut up in to tender size pieces.  That made for a bit more work, but it made the recipe just that much more cost effective.  Everyone loved it, even the picky 4 year old.  This is out of eating well and seems to be fairly light and if you click on the title of the recipe below, it will take you to their site with all the nutritional information.  Some of us had it with rice, some with bread.  I personally preferred the naan with the chicken, but the people with rice enjoyed theirs too.  Quick Chicken Tikka Masala 4 teaspoons garam masala (see Note) 1/2 teaspoon salt 1/4 teaspoon turmeric 1/2 cup all-purpose flour 1 pound chicken tenders 4 teaspoons canola ...

Curried Carrot Soup

My darling husband had a wisdom tooth extracted this morning, so I planned on making soup for him for dinner.  Turns out, he can't have any hot foods today, so he had to eat it room temp.   Luckily, the instructions said that it could be served cold.  Now, I hated this soup.  I am not a fan of carrot and it was very carrot-y.  I ate it, but I deleted the recipe.  My husband thought it ok, but the boy liked it and told me to keep the recipe.  (shhh don't tell him that I didn't;)  It was easy to make, I will give it that.  If you adore carrots, then you will like this. Indian-Spiced Shrimp & Indian-Style Mustard Greens

Tonight, my wonderful husband did the cooking.  I had mustard greens from my Front Porch Pickings basket and I had shrimp I needed to use and I had a recipe for Indian spiced both!  We had never had mustard greens before although we have cooked other greens.  I loved that the greens were pureed.  It made them a lovely texture.  I won't lie, the boys weren't the biggest fan of the greens, but I count this recipe as a win.  Why?  Well the first time your eat something, especially something bitter, you are going to have to get used to it before you are going to enjoy it.  An unfamiliar taste, will be perceived as bad most of the time, and almost every time if it's bitter since bitter is nature's way of warning of toxins.  Ironic that these greens are more like medicine for our bodies.  And while it wasn't a huge hit, every one ate all their greens without any complaint.  All I heard were comments as to the unusual flavors.  ...

Chicken Balti & Spinach Raita

The horror! The raita;) Well I was having a friend over and she loves Indian food.  I wanted her to try a recipe I made on February 2nd ( http://ormonddinners.blogspot.com/2012/02/best-ever-chicken-balti.html ) because it was one of the tastiest things I have ever eaten.  But, as I want a new recipe every day, I went looking for a side dish to try.  I had plenty of Greek yogurt to use, so I decided on the spinach raita.  That was a mistake.  No one liked it at all.  I couldn't believe how much it disappointed considering that it was chuck full of spinach and garlic.  The only deviation I made was with the dried red chilli; I used red pepper flakes.  In addition we had some samosas and chickpea fritters and rice.  Anyone out there know why the raita was such a epic fail?  Got a better recipe?  Please let me know:). This is a dish from Food & Wine that didn't wow us.  I think the flavors were ok. (really spicy!) Having the ingredients for last night's dish still not completely used up, and my husband having later hours tonight, I thought this panini would be a good solution. It uses the ingredients and it is quick to make late when he gets home.  It was very tasty, not as good as last night's dinner, but a very fast, tasty, and somewhat different dinner.  I think  the use of naan as panini bread is a fabulous idea, and I am now in love with Major Grey's Mango Chutney.  Paninis are a great way  to have a fast hot meal that can be varied almost infinitely. Best Ever Chicken Balti

This was so AMAZINGLY tasty.  I can't recommend enough trying this dish.  I plan on making and freezing the sauce just to have it on hand.  I can see it working with all kinds of proteins.  I know Indian food can be daunting, but this one is not only easy, but doesn't require lots of hard to find ingredients.  We ate it with naan and broccoli.  I can't stop thinking about it! I plan on giving some of the jars of sauce as a gift.
